This small dosing pump is used to spray ascorbic acid (or citric acid) solution on to pommace, in order to avoid browning. The flow is adjustable between 0 and 18 litres/hour.

First dissolve ascorbic acid in juice (or water) inside the 30 litre blue plastic container. Following the method used by Pershore College, dissolve 0.5 grams of ascorbic acid per litre.

From there the dosing pump sucks out and sprays the solution through a small nozzle that can be positioned over a belt press or installed on the outlet of a mill.

In that way the pommace is protected from the time the apples are milled.

It is important to make the concentration of solution high enough, as a part of the ascorbic acid is discharged from the press with the rest of the mash.
