This small dosing pump is used to spray ascorbic acid (or citric acid) solution on to pommace, in order to avoid browning.
First dissolve ascorbic acid in juice (or water) inside the blue container. Following the method used by Pershore College, dissolve 0.5 grams of ascorbic acid per litre.
From there the dosing pump sucks out and sprays directly on to the pommace through a small nozzle that we place on a belt press or install directly on the outlet of the mill.
In that way the apple pommace is protected from the time the apples are crushed.
It is important to make the concentration of solution high enough, as a part of the ascorbic acid is discharged from the press with the rest of the mash.
