I've heard that some 'large wineries' are not rinsing/sterilising bottles prior to filling, they are taking a significant risk. In Germany they do this
occasionally but only by having delivery direct from the bottle manufacturer and filling the bottles within 7 days of manufacture, before there is much risk of
contamination. This timescale is really not possible in UK. I believe that Environmental Health would not be happy if they knew what was happening.
I have had pallets of bottles delivered from one of the major suppliers in London, long established and highly reputable, and
on a couple of occasions I've found rainwater in some bottles, which had leaked in through the packing. So it is important to rinse/sterilise and drain bottles before filling.
Typically, 2% Free SO2 solution would be used as the bottle sterilising solution.

Note: the above rinser nozzle projects about 50 mm inside the bottle neck, so short bottles can be rinsed. The rinser is designed for a bottle neck internal diameter of about 18 mm; in order to work with larger diameter bottle necks it would be possible to make (and stick on) a small plastic disc (wider, and perforated to allow liquid through) to fit over the neck-stop.

SM: SMP:
A range of models designed to rinse and/or blow the bottles dry before filling.
The operator places the bottles upside down over the nozzles, two at a time, the water
(or air) jets are started by the downward pressure of the hand. After sufficient time has elapsed, the operator releases the pressure and the sprays stop.
The units are supplied with a filter assembly for the water and for the compressed air.
For the air-compressor, the makers suggest a 24 litre tank - 0.75 HP - Oil free model, or a 50 litre.
Alternatively the machine could be connected to a Nitrogen cylinder, which would be quieter.
Some models have a pump for re-circulating a sterilising solution (shown in the second photo).
Accepts from 0.375 to 1.5 litre cylindrical glass bottles.
Overall size: 450 mm x 450 mm x 750 mm high.
Noise level: Lpa < 30 db (tested according to UNI 7712 standards).

Advice: replacement of the cartridges should be done at least once a year, but it depends on the usage and on the cleaning made after every working cycle.

rinsing with sterilising solution then with sterile-filtered water, £6175
The 2 rinsing jets are operated by 2 sensors detecting the neck of the bottle (no bottle – no spraying).
One rinsing nozzle sprays the sterilising solution throughout the bottle,
then a second nozzle sprays sterile water, which has passed through a 0.35 micron filter cartridge.
After the double treatment, the table continues rotating while the water drips out.
The sterilising solution is recycled, after being collected in a separate tank, by a stainless steel pump and passing through a 0.45 micron filter cartridge.

TP20/S - air blower, rotary table with 20 places, designed for use with products which must not come into contact with water, such as edible oils, £4900
One nozzle sprays air under pressure inside the bottle, to remove powder and any small particle.
The table goes on rotating to make at least one complete turn, before the operator can remove the bottle.
There is a filtering assembly for the compressed air.
